This guide lays out the real differences so you can choose with confidence.
The one-sentence version
Memory foam lets you sink in and molds around your shoulders and hips, which is great for pressure relief. Talalay latex is springy and buoyant, holds you up rather than letting you sink, and sleeps cooler. If you sleep on your side and want your sore spots cushioned, lean memory foam. If you sleep hot, change positions a lot, or dislike the “stuck” feeling, lean latex.

Feel and support
This is the difference you notice in the first ten seconds. Lie down on memory foam and it warms up, softens, and slowly forms a cradle around you. It feels like the bed is holding you. Lie down on Talalay latex and it compresses instantly, then pushes back with a gentle spring. It feels like floating on top of the bed rather than in it.
Neither is better, but they suit different people. Side sleepers with sharp pressure at the shoulder and hip usually love memory foam’s deeper contour. Back sleepers, combination sleepers, and anyone who felt trapped by memory foam in the past tend to prefer latex.
Temperature
Memory foam’s reputation for sleeping hot comes from the dense, closed-cell foams of twenty years ago. Modern gel-infused, open-cell memory foam like ours breathes far better, and most of our customers are surprised by how cool it sleeps. Still, latex wins this category. Talalay latex is produced with a vacuum and flash-freeze process that creates a consistent open-cell structure, and it does not soften and hug you the way memory foam does, so less of your body is enclosed. If you are a hot sleeper first and a pressure-relief seeker second, choose latex.
Durability
A quality gel memory foam topper lasts 5 to 10 years; we warranty ours for 5. Cheap imported foam often gives up in 1 to 3 years, which is where memory foam gets an unfair reputation. Talalay latex is extremely resilient and tends to hold its shape and bounce even longer. Both of our topper types carry the same 5-year warranty.
What is Talalay latex, exactly?
Latex foam is made from the sap of the rubber tree. There are two ways to turn that sap into a mattress topper. The Dunlop process pours the latex into a mold and bakes it, which gives a denser, firmer foam that is heavier at the bottom than the top. The Talalay process adds two steps: the mold is sealed and a vacuum pulls the latex evenly into every corner, then it is flash-frozen before baking. The result is a lighter, springier, more consistent foam with an open-cell structure from top to bottom. That is why Talalay sleeps cooler and feels more buoyant than Dunlop, and why we chose it for our latex toppers and pillows. Ours is Talalay latex and Oeko-Tex certified.
What about gel memory foam?
Memory foam is a polyurethane foam engineered to soften with body heat, which is what gives it that slow, molding response. Our gel memory foam is poured in our own Phoenix factory, infused with cooling gel, and made with an open-cell structure so air can move through it. It is CertiPUR-US certified, fiberglass free, and made without fire-retardant sprays. Because we control the whole process from chemistry to cutting, the density and feel are consistent from one topper to the next, which is not something you can count on with imported foam.
Firmness options
Our Talalay latex toppers come in 2 or 3 inch thickness and two firmness levels: 24 ILD for a softer surface and 28 ILD for a medium feel. Our gel memory foam toppers come in 2, 3, or 4 inches, and if you want a firmer memory foam experience, the two-layer Firm Mattress Topper adds a supportive base under the gel layer.
Special situations
- Adjustable bases and split kings: latex bends at the hinge without cracking, so it is our usual recommendation.
- RVs and sofa beds: memory foam is lighter, easier to roll up, and does a better job hiding a lumpy, thin mattress underneath.
- Couples with different preferences: memory foam’s near-zero motion transfer is hard to beat.
